Why not ask your question on the new OpenStreetMap Community Forum?

Hello,

I would like to export a map of Nice city in France to print it on a brochure. But I do not want to see drug stores, restaurants, etc. I tried to use osmconvert and osmfilter but I am a bit lost... Any help would be greatly appreciated ! :)

You can use various tools (Mapnik, TileMill, etc) to render the map yourself and/or filter the unwanted data in the database or in the rendering styles. You may also use a third party provider with customized OSM map styles (Geofabrik, CloudMade). Contact the french mailing list or one of the forums to get more information directly from the french community. You could also check previous answers about similar questions on this help site (e.g. here).
